LEMON POPPY SEED BUNDT CAKE WITH LEMON GLAZE
Ingredients
You will need a 6 cup Bundt Pan sprayed generously with non-stick spray
1 box Lemon Poppy Seed Cake Mix
4 Tbsp. unsalted butter, room temperature
2 large eggs
2/3 cup buttermilk
Instructions
Preheat oven to 350°F. In a bowl of a stand mixer fitted with the flat beater, beat the butter until fluffy. Add a small amount (about 1/4 cup) of the cake mix and mix on medium-low speed until blended. Scrape down the sides of the bowl as needed. Add 1 egg, half of the buttermilk and 1/2 of the cake mix and mix on medium-low until blended. Scrape down the sides of the bowl as needed. Add the second egg, the remainder of the cake mix, and buttermilk. Mix on medium-high for about 1-2 minutes. Remove bowl from mixer and pour batter into prepared pan. Bake for 35-40 minutes. Remove from oven and let cool for about 10-15 minutes before removing from pan. Let cool completely before topping with glaze.
Lemon Glaze
1 cup powdered sugar
2 Tbsp. freshly squeezed lemon juice
Place powdered sugar into a small bowl and add the lemon juice. Mix well until completely blended. Pour glaze on top of cooled cake, letting the glaze run down the sides. Let glaze set before slicing and serving.
